Smart destination?
It’s first and foremost a smart destination where the time’s been taken to develop a cross-disciplinary approach, where the smallest detail has been looked into to attract visitors and above all guide them every step of the way during their visit.
Your Smart action?
My smart action is to work with small-scale producers, not only in the region, but also and above all in central Lyon. What’s interesting today is that with the Syndicat des Monts d’Or, farming is being reintroduced into the urban environment. Of course, these are the varieties that you’ll find in my dishes.
Your favorite spot?
In Lyon, there’s a place few people know about. The Jardins de Fontanières, where it feels like time has stood still. It’s an absolutely magical place, where you’ve got citrus plants growing straight in the ground, rather than in greenhouses, and a whole range of varieties of vegetables and aromatic herbs.
It’s really worth a visit.
