La Mère Brazier was founded in 1921 by Eugénie Brazier, one of the most famous “Mères Lyonnaises” (Lyon’s legendary female chefs). Politicians and well-known figures flocked to this local institution for more than half a century, even before it was taken over in 2008 by Mathieu Viannay, who was awarded the title ‘Meilleur Ouvrier de France’ in 2004. He has since transformed its cuisine with a delicate touch and respect for tradition.
La Mère Brazier is today an internationally renowned local institution, which has received two stars in the Michelin Guide since 2009 (barely a year after Mathieu Viannay took the reins).
And the spirit of Mère Brazier remains in the kitchen. Chef Mathieu Viannay, who likes clean, stylish lines, works with an intuitive approach: “I think about ingredients according to the season and pick them from my memory of tastes. It then all comes together in my mind”.
The famous ‘poularde demi-deuil’ (chicken stuffed with truffles) is on the menu, but the Chef does not hesitate to vary the recipe when truffle season is over. It then becomes Bresse chicken and lobster, steamed in a cocotte and served with a vegetable stew and jus.
Among the many mouth-watering dishes on the menu, these ones caught our eye: Pan-fried Foie Gras and Artichoke N°11; Sea urchin, Carabineros shrimp and Ossetra caviar, on Fresh Baguette with Herb Butter; Gilt-Head Bream with Grey Shrimp Butter, Multi-colour Cauliflower and Green Apple; or the famous Bresse Chicken and Blue Lobster in Two Servings. For dessert, we recommend the Grand Marnier Soufflé or a Praline Chou bun (similar to a Paris-Brest).
The restaurant can welcome up to 60 diners, from Monday to Friday.
