Having switched from International Business, the still young chef Florent El Sair is calmly creative, and has no time for looking over his neighbour’s shoulder. He has plenty of culinary experience, with stints at Maison Lameloise in Burgundy, Floris in Geneva. He has also embarked on gourmet travels in China and the Bahamas.

Eventually settling behind his own stove at the Cercle Rouge. His approach is essentially to employ haute-cuisine technique without the fussiness, and without an obsession with scallops!

He casts his net wide, with barbecued dishes, Asian and American influences, Caribbean and Eastern flavours... and all without suffering from jet lag!

Simple, lively and surprising. Sold!
